Colour is the amount of green mass at each point. Brown and amber zones are open ground, bald patches or struggling crops; green means vegetation in good shape. Read not the absolute colour but the difference between zones of the same field: a patch that stands out is a reason to walk over and look.
A pixel is 10 metres, so narrow beds average out with the alleys. Grey holes with no colour are clouds on the day of capture.

NDVI is computed from the red and infrared bands, at 10-metre resolution. It is an estimate of vegetation health, not a diagnosis: a low value is a reason to go and look, not a verdict. Cadastre and Copernicus Sentinel-2 data are public.
